Coffee first became part of the Turkish culture in around 1600. Since then, coffee has left an enormous mark on Turkish culture. Even the name of breakfast (kahvalti) means "before coffee." Turkish coffee is very similar to Greek coffee, and indeed, many types of strong coffee - much stronger than espresso - may be found throughout the Middle East region, where it is known as Arabic coffee (and used to be brewed all day by heating the coffee in hot sands). However, most people outside the region have only tried Turkish kahvesi in a coffee shop or restaurant. Although the preparation may seem difficult - Turkish coffee is prepared in a dramatically different manner than drip coffee prepared in coffee makers - it's quite easy to make. It won't necessarily be perfect, since even in Turkey the ability to make a great cup of coffee is viewed as somewhere between a skill and an art, but it will taste good and authentic.
Modern Turkish Coffee
Fill the Turkish coffee pot with cold water until just before the neck's thinnest point.Add 1 teaspoon coffee grounds per 2 ounces of water. Add the cardamom and stir.If you'd like sugar in your coffee, add it now, before brewing the coffee. If you'd like it very sugary, add a tablespoon; for moderately sugary coffee [link widoczny dla zalogowanych], add a teaspoon of sugar per cup.Put the pot over low heat and boil. Watch it very carefully because it is very easy for Turkish coffee to start bubbling and overflow.Wait for a froth to form on the surface. Pour the remaining coffee into the cups, apportioning out the foam evenly using a small spoon. Make sure to remove the cardamom pod from the coffee.If you would like, you may add milk.Warnings
Turkish coffee will have a thick coat of coffee grounds at the bottom of each cup. Be careful not to drink this as it tastes quite terrible. Turkish coffee is also very strong, so you may want to add more sugar than you would to normal drip or filter coffee.
